So you see nothing at all in FSUIPC's button assignment panel when you turn the mode switch? I think you should see buttons 133, 134 and 135 registered, but I don't have the X-56. I have the X-55, and the mode buttons on that are 31, 132 and 133.
If you have installed any software and/or drivers, then remove/uninstall those - you don't need them if using FSUIPC and they can cause issues.
In some versions of the Saitek X-5? throttles, you may need to remove/rename a saitek system file. Its in C:\Windows\System32 and may be called SaiD053C.pro. If that file exists, try renaming it, reboot and then see if FSUIPC recognises the mode switch. Note also that you would normally not assign directly to the mode switch, but use it in compound button assignments, so the assignment to a button would depend on the position of the mode switch.

But now FSUIP does not list these keys.

What "keys"? We are talking about the mode button/switch, not keys.

That seems to be an overly complicated way of using the mode switch to me, you should use compound conditions instead (see FSUIPC Advanced User guide). Alternatively, if you are setting an offset with the mode switch, you could use an offset condition on your assignments then you wouldn't need to use lua, but compound assignments are far easier and you do not need to use an offset (or have any assignments on the mode switch)
But either way, it should work.
Could you set logging for Buttons & Keys, add logging for offset x66C0 (or whatever offset you are setting with the mode switch), and then generate a short log file showing your issue, and then attach that as well as your FSUIPC7.ini file.

@fsuipc-support The keys I refer to are the M1, M2 and S1 modes that exist on the control (sorry for not being so clear at the beginning).
I agree 100% with you that I did it in a more complicated way and I want to change to the way recommended in the manual.
The current difficulty is for FSUIPC to recognize these keys (M1,M2,S1). I enabled all logs and, when I change the keys, nothing appears in the logs.
