I would like to know which settings to use under the "Traffic" tab so that I have unlimited AI traffic

Setting the traffic upper limit to 0 should disable the traffic limiter. Maybe also set the target FPS slider to 0 (just in case). see appendix 4 ( Traffic Limiter Facility INI Parameters ) in the FSUIPC Advanced User manual.
